Avocado Brownies

Okay, now let’s devour these avocado brownies. Yep, I said AVOCADO brownies.
Memorial Day weekend was a little spontaneous, but who doesn’t need a little surprise in their life occasionally? If you follow us on Instagram you’d know I was super pumped because Justin and his boyfriend, my longtime friend, Sam, were planning a visit to Ohio for Justin’s big 28th birthday. Justin and I haven’t been in the same city since March, so I’m sure you can imagine how excited I was for my two best friends to be in town and for all the birthday shenanigans we were going to have. Well, sometimes life can be unhappy; on Friday, we found out a friend of Justin’s from high school had passed away and Justin needed to stay in Kentucky. Justin was devastated and I wasn’t going to hold the fort in Ohio while my friend’s heart was breaking. Arlo and I packed our bags and we headed south!
To make the weekend the best we could, Justin and I headed straight to the grocery store. He needed comfort food, and what’s better than brownies? AVOCADO BROWNIES. We had this recipe in our minds for months and it was finally time to whip up a batch and try them out for ourselves.
Amazing.
The texture is so rich and creamy, and the avocados, you can barely taste them. Justin, Sam, and I are in between about whether the brownies taste better straight out of the oven or after they’ve cooled. You’ll have to let us know which you think is better!

Ingredients:
300 g dark chocolate (chopped or chips) 2 tbsp coconut oil 1 cup mashed avocado (about 2 hass avocados, pitted and peeled) 1/2 cup honey 1 tsp vanilla extract 3 eggs 1/2 cup unsweetened cocoa powder 1/2 cup less 1 Tbsp. coconut flour
Avocado Frosting:
One medium sized hass avocado, pitted and peeled 3 Tbsp unsweetened cocoa powder 3 Tbsp honey
3 Tbsp white sugar (optional)
Preheat oven to 400 degrees F. Coat a 9 x 13 pan with coconut oil.
Melt coconut oil and dark chocolate. Once cooled add your avocados, honey, and vanilla extract and mix until even. Next, add your eggs one by one. After that you’ll stir in your coconut flour and cocoa powder! Pour your batter into your pan and bake for 12 – 15 minutes.


Once your brownies are finished let them cool and then make your frosting! Justin and I found the brownies to be very rich and we needed the frosting to be a tad sweet, which is why we added a little sugar to our mixture. Try it out!
