Sliced Lemon & Blueberry Sugar Cookies

Oh baby, are these good! I mean gooooooood.
Back when Justin and I lived together in a house which smelled of a 21-year old’s breathe and had random Miller Light 40s taped together to make wizard wands, we used to cook dinner together. Nothing to brag about really. It was during a time when we were too lazy to defrost chicken, so we’d put it in a pan and take turns flipping the breast and scraping off the cooked parts with forks (now I think of it, I really question if it was all that sanitary). Anyway, we found a love for cooking we didn’t know we had. Those moments in that little kitchenette, over the 200 something, oil greased oven, we found such a comfort while making random dinners and appetizers. I mean there are lots of ways to jazz up your chip and dip tray, let me tell you! And hey, we got lots of compliments. We did have a great audience. Drunk people will eat just about anything…
Now, back to the Lemon and Blueberry cookies!
These are seriously so good. I came across these fancy little cookies on Pinterest a few months ago from this great blog, Tikkido, run by a wonderfully talented woman named Nikki Wills. Of course, my reenactment was nothing compared to hers, but I’m a huge fan of lemon and this recipe was top on my cooking list, and right in time for my nephew’s second birthday party! His favorite fruit is blueberries at the moment which is why I mixed up Nikki’s recipe a tad. Plus, lemons and blueberries go hand in hand in my book!

You can find the recipe here on Tikkido.com. I did make a few adjustments by using gluten free flour instead of regular flour and adding juice from a whole lemon. Like I said in my past blogs, my whole family has some kind of food intolerant, so it’s in my favor if I keep these recipes belly safe.
